1 large butternut squash, peeled and seeds removed
1/2 cup butter or margarine
1/2 cup brown sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup of chopped pecans or walnuts (optional)
1. Preheat the oven to 400°F. Grease a 9 x 13 inch glass baking dish.
2. Using a large, sharp knife, cut the butternut squash (that has already been peeled, halved, and seeds removed) into 1 inch cubes.
3. Place cubed butternut squash into a large bowl. To this bowl, add butter, brown sugar, vanilla extract, cinnamon, salt and chopped nuts. Mix all ingredients together well, making sure all of the squash is well coated.
4. Pour butternut squash mixture into the prepared baking dish. Cover with aluminum foil and bake for 1 hour or until squash is tender.
